A farm and roasting plant in Coatepec, Veracruz, Mexico

Cielo Abierto is a family company from Veracruz, Mexico, dedicated to growing and selling coffee: our own high-altitude farm and roasting plant in Coatepec, inside a private natural conservation area at the foot of Pico de Orizaba. Here we grow, harvest, dry, roast and pack — all in one place, from cherry on the tree to your cup. And beyond our coffee from Coatepec, we source and roast other origins like Chiapas, Oaxaca and Colombia. For Colombia, we work in partnership with the Federación Nacional de Cafeteros de Colombia.

We buy coffee directly from the Federación Nacional de Cafeteros de Colombia: traceability back to the source, consistent quality across harvests and reliable supply — available in the shop, for private label orders and for industrial volume. And when a project meets the Federación's guidelines, we handle the authorization for your private label to carry the official "Café de Colombia" logo.

Our story · The Cielo Abierto farm

More than 20 years caring for this land

Cielo Abierto is a family farm in Veracruz, planted inside a Private Natural Conservation Area in Coatepec, 1,200 meters (3,900 ft) above sea level, at the foot of Pico de Orizaba. Our plot grows under banana and orange shade trees — that shade isn't decoration: it cools things down, slows the ripening of the cherry, and leaves the floral and chocolate notes in the cup that set our coffee apart.

The microclimate does the rest. Fog rolls over the coffee grove every morning during the November-December harvest, and summer rains feed the spring that waters the farm. Cherry that ripens slowly, mountain water, volcanic soil: that's the terroir you can't copy.

Where the coffee is born

Our home: Coatepec.

All of our own harvest is grown in the coffee-growing region of Coatepec, at the foot of Pico de Orizaba — one of Mexico's coffee regions with a protected designation of origin. Same land, same hands, same fog. And when a project calls for more origins, we source beans from Chiapas, Oaxaca and Colombia — the last one alongside the Federación Nacional de Cafeteros de Colombia.

This is how every batch is born

Nothing gets outsourced. We only pick ripe cherries to get a clean, sweet, balanced cup — and the whole process passes through our hands.

01 · Harvest

Cherry by cherry, by hand

We pick only the fruit that's perfectly red. Never green, never over — that selective picking is what defines the sweetness in the cup.

02 · Sorting

Sorted by hand

We separate by ripeness before processing. Any bean that doesn't measure up gets set aside. What's left is the heart of the harvest.

The green bean rests and stabilizes before roasting. It's the patience you can't see, but you can taste.
